This week has has been an exhausting and emotional whirlwind. I won’t bore you with the details but let’s just say I was over this week on Monday. But I did want to jump on the blog for a minute to post these yummy muffin recipes! Have I posted the picture I got a ton of requests for the recipes. This first one was one my mom used from back when my sister was in preschool…back when homemade things were ok and appreciated. They are so good!
Pumpkin Muffin Recipes
RECIPE #1
Preheat oven to 350.
RECIPE # 2
This is the recipe that goes out to everyone in a local Mom’s Bible Study. Why? Because it’s super easy and us moms need something easy to make this time of year. My kids love these for snacks after school or dessert for a special treat. I make the above recipe for breakfast since they don’t have chocolate chips.
Makes 12 delicious muffins.
Preheat oven to 350.
1 can of pureed pumpkin (I use the organic kind from Trader Joe’s)
3/4 cup semi-sweet chocolate chips (can use vegan)
1 box spice cake mix
Mix all ingredients in bowl. Put muffin mixture evenly (about 2/3 full) in muffin pans lined with paper muffin cups. Bake for 15 minutes. Remove from oven and let cool. Enjoy!
